Many olive recipes you need to change the water every day and in my experience, the olives eventually go off. Other recipes you are supposed to slice each one with a knife although I am not sure why. Then there are recipes where you cover the olives in salt, they shrivel up like prunes and are far too salty even for me.
Then I met a Macedonian lady at a party some years ago and she wrote this recipe for me on a piece of paper towel.
