Frittata recipe.  Contains egg, capsicum, onion, mushroom, tomato, parsley, cheese

-Frittata is really a large omelette, full of vegetables, that you don't have to flip, since you cook the bottom of the frittata on the stove top, and the top of the frittata under the grill.

-Eggs have a Tick from The Heart Foundation.  The liver makes cholesterol from saturated animal fat in the diet (eg. sausage fat)  and this is far worse for blood cholesterol than the cholesterol that comes from eggs.  Cholesterol in eggs contributes very little if anything to a raised blood cholesterol. Studies from large groups of people followed over 14 years support no association between weekly egg consumption and heart disease or stroke (JAMA 1999: 281; 1387-1394).  

-Eggs are a complete protein, and are a meat alternative. They are a good source of vitamin A, B1, B12, D and E as well as folate.  They also contain the antioxidants, lutein and zeaxanthin.  

-As this meal doesn't have a good source of carbohydrate, it could be eaten with a couple of slices of wholegrain bread.
