-In general I prefer to use a 50:50 ratio of butter:vegetable oil in cake and biscuit recipes because of the health benefits of vegetable oils. My opinion is that olive oil does not adversely effect the flavour of cakes, especially cakes that are made with wholemeal flour.
-Oats have soluble fibre and low GI.
-Just because the fruit (apple) is not fresh does not mean it cannot contribute to your daily recommended intake of 2 serves of fruit per day. Canned fruits can be just as healthy as fresh fruits.
-Western diets contain a lot of wheat. The crumble is a good chance to add other grains such as corn meal (polenta) or buckwheat to your diet. You could also almond meal to the crumble.
