recipe for halloumi pie with vegetables, egg and leftover rice

-This recipe is a combination of a commonly made zucchini slice and halloumi fritters/patties.  The problem is that I can’t be bothered standing for an hour and flipping patties in a fry pan.  I also find zucchini is a bit of a boring vegetable to be the only one in the meal.  By all means, add zucchini.  But also add other vegetables that cook fairly quickly such as frozen vegetables, kale, parsley, asparagus, artichoke hearts from a jar, thistles from your garden.  Use your imagination!

-The halloumi cheese, egg and flour all bind the mixture together as the pie is cooking.  If halloumi is not available or too expensive, use fetta or any other cheese.

-I do like adding leftover cooked rice to this pie.  It means it is suitable for anyone with Coeliac disease, as long as you also substitute the wheat flour for another type of flour such as buckwheat flour, quinoa flour, chickpea flour.
