-A large batch of muffins can be frozen and used for lunches during the week.
-Muffins are great for “disguising” over-ripe bananas, apples with grubs, vegetables such grated carrot or zucchini and soy milk.
-Soy milk is a legume. A recurring theme in all these recipes, is to add legumes because of their good quality protein which is also more environmentally sustainable to produce than animal protein, their high fibre content and other associated health benefits.
-Always use wholemeal self-raising flour for more fibre and vitamins.
