-Western diets contain a lot of wheat. This recipe is a good chance to add other grains such as corn meal (polenta), buckwheat flour and quinoa flour to your diet. 

-Seeds and nuts have many health benefits (protein, unsaturated fats, fat soluble vitamins and minerals), and hence, the addition of almond meal.  Poppy seeds also go well.

-In general, I prefer to use a 50:50 ratio of butter:vegetable oil in cake and biscuit recipes because of the health benefits of vegetable oils.   My opinion is that olive oil does not adversely effect the flavour of cakes, especially cakes that are made with wholemeal flour and other whole grains.
