-Soba noodles are made from buckwheat which is not a cereal or a grass but a fruit that is closely related to wild rhubarb. Soba noodles have a low glycaemic index (GI) of 46.
-Miso is a fermented paste made from soybeans. When you have been brought up on meat and three veg what do you do with miso? I think it goes really well in this dressing as well as being a good marinade for veges and kebabs.
-As with other recipes on this site, note the brightly coloured vegetables (capsicum, asparagus, snow peas and capsicum) which tend to have a high content of antioxidants.
