-Soba noodles are made from buckwheat which is not a cereal or a grass but a fruit that is closely related to wild rhubarb. Soba noodles have a low glycaemic index (GI) of 46.
-Miso is a fermented paste made from soybeans. When you have been brought up on meat and three veg what do you do with miso? As a flavour in this soup, it is particularly good. Miso also goes really well in a salad dressing and as a marinade.
-Miso is fermented soy bean paste and is very salty meanin gyou can easily keep it in the fridge for a year.
