This recipe is so easy. A friend (Muge) introduced me to it. I have since taken the dip to various Christmas and New Year dinners. It is always a success.

A medium sized artichoke provides 30% of the reccomended daily amount of fibre.
Some consumption of dairy is reccomended as a source of calcium. So, parmesan cheese is a good choice.
A commercial mayonnaise is acceptable given that 2/3 of the recipe is cheese and artichokes.
Spread the dip on sourdough bread or oat crackers to further reduce the blood glucose response
