-On its own, a hot baked potato has a high GI (glycaemic index). However, when a range of vegetables (eg. Cabbage, carrot, chives) and a protein source (such as cheese, tzatziki dip) are added to the potato, a baked potato is turned into a complete meal and the GI is “diluted”. It is worth baking at least a kilo of potatoes at a time and storing them in the fridge for a few days. They can be heated in the microwave for dinner for a few nights, or they can be eaten for breakfast or as snacks after school.
-Tzatziki (yoghurt dip) is used instead of mayonnaise for coleslaw. Being a dairy food, tzatziki is a good source of calcium and protein. Fermented dairy products, such as yoghurt contain certain strains of bacteria that could be used to treat diarrhoea and other gastrointestinal disorders. It also contains herbs such as garlic and mint, and cucumber, all of which are sources of vitamins and minerals, as well as antioxidants.
