cauliflower soup recipe with tumeric, coriander, cumin, celery, potato, stock, Greek yoghurt

-Some vegetables are considered to be more nutritionally valuable than others, and the cruciferous vegetables (cauliflower, broccoli) would be high up on the list in terms of value. This recipe enables a whole cauliflower to be consumed by a family in one meal.

-Try adding a handful (or more) of chopped edible "weeds" such as sow thistle, mallow, amaranth, stinging nettle, nightshade or sea celery (if you are near the coast). See my edible weeds page.

-I prefer to use either yoghurt or silken tofu instead of cream in soups.  Fermented dairy products, such as yoghurt contain selected strains of bacteria that could be used to treat diarrhea and other gastrointestinal disorders

-If you decide to add tofu, ensure that it is the silken variety as firm tofu will not blend well into creamy texture. For those that think they don't like tofu, the flavour is well disguised by the curry powder and onion.
