-sweet potato gnocchi would have the lowest glycaemic index.  But it is fine to use either pumpkin or potato gnocchi as well.  The pasta sauce, is acidic and lowers the glycaemic index of the total meal.

-Ideally, add some vegetables or herbs to the pasta sauce.  But, if you are in a hurry, don't worry.  

-I usually transfer the fried gnocchi straight into a baking dish and pour the preheated sauce over the gnocchi.  That way, you can grill the cheese on top and it is faster than heating up the oven and baking it.
