-In general I prefer to use a 50:50 ratio of butter:vegetable oil in cake and biscuit recipes because of the health benefits of vegetable oils and the taste of butter. My opinion is that olive oil does not adversely effect the flavour of cakes, especially cakes that are made with wholemeal flour.
-Western diets contain a lot of wheat. This recipe is an opportunity to add other grains such as oats (which have a low glycaemic index and contain soluble fibre). You could add a combination of grains eg. buckwheat flour and quinoa flour.
-Adding seeds, nuts and dried fruits confers other health benefits (fibre, insaturated fats, minerals, vitamins) eg. pumpkin seeds, sunflower seeds, sesame seeds, chopped almonds or walnuts, sultanas.
