-When making any salad always think of brightly coloured vegetables to add eg. tomato, capsicum, spinach, herbs. They contain more antioxidants and vitamins than paler coloured vegetables and may help prevent chronic diseases such as Alzheimer's disease.
-Try adding purslane to this salad. It is perfect for this edible "weed". See my edible weeds page.
-Feta cheese and olives are both fermented foods which may have benefits for bowel health including diarrhoea
-The fat in avocados is mostly mono-unsaturated (the “good” type). They contain essential fat-soluble vitamins.
-Vinegar or lemon juice, being acids, lower the GI of the whole meal (ref), increase satiety (sense of fullness) and may reduce blood cholesterol.
