-These biscuits have the consistency of shortbread.
-Either buy green bean flour in an Asian supermarket or make your own out of mung beans. Mung beans are cheap, high in protein, have a low glycaemic index (GI), high fibre and taste excellent in these biscuits. What more could you wish for!
-I use a combination of butter and olive oil so that you have the best of both worlds- the taste of some butter plus a healthier oil.
-Sugar in this recipe will have little or no adverse effect on the GI of the food because the other main ingredients have a low GI.
