-Peanut butter is high in unsaturated fats (poly and mono unsaturated fats) and fat-soluble vitamins.

-Peanuts are technically a legume, not a nut.  A recurring theme in all these recipes, is to add legumes because of their good quality protein which is also more environmentally sustainable to produce than animal protein, their high fibre content and other associated health benefits. 

-Oats have soluble fibre and low GI

-Wholemeal flour has more fibre and vitamins than white flour

-Olive oil, rather than butter, is added, so that the mixture is not too dry and will hold together.

-Sugar in this recipe will have little or no adverse effect on the GI of the food because the other major ingredients have a very low GI
