-This recipe is a bit more involved in that you cook the polenta first and then grilling or bake it.  However, I think it is worth it partly because you are using polenta as a base rather than the usual wheat.  Also, when cooking up the polenta mix, there is the opportunity to use lots of herbs.  The polenta will keep in the fridge for a few days and you can grill a few slices for each meal over a few nights.

-A great way to increase our vegetable intake is to take a jar of tomato sauce as a base and cook extra vegetables in the sauce. Tomatoes, especially cooked tomatoes contain antioxidants (such as lycopene). High intake of tomatoes has been liked with a lower incidence of some chronic diseases such as prostate cancer
