Some people say this is a national dish in China.  I think it must have been invented when someone failed to flip the omelette properly.  Try not to overcook the egg.

An interesting fact is that cooking tomatoes in oil increases the availability of lycopenes.

You don't need to thicken the tomatoes with chick pea flour but it is another way of adding legumes to your diet.
