Foraging in Scotland

Updated: Oct 28, 2018

Edible rose-hips, also called Rosa Rugosa.
Rose-hips found near Inverness, Scottland

This is what I found walking back from Clava Cairns (4000 year old bronze age tombs) near Inverness, Scotland. The road was lined with rose bushes. These are rose hips, the technical name being Rosa rugosa. These rose hips taste a bit like persimmons. Rose hips are very high in Vitamin C. Apparently you can make tea, sauces and jellies with rose hips. Remove the seeds as they are covered in tiny very itchy hairs. I would be interested in what other culinary uses you have found for rose hips.
