Roast lamb on Australia Day. Really?

It was 35.9C at 4pm in Melbourne on the 26th Jan. No way was I cooking lamb! Vietnamese spring rolls involve no cooking and they were really popular.

For Australia day, I chopped up cold marinated tofu, added grated radish, avocado, carrot, vermicelli, Vietnamese mint and a drizzle of sesame oil to the mixture. The dipping sauce was a combo of fish sauce, dark vinegar and chili flakes.
